Vegan Quiche

Hello! We just finished the spring performances at the ballet school and it's been a very busy few weeks. I'm not really sure if I was coherent the entire time. All I remember is the driving, some crying, and lots of food. So. Much. Food.

First, obligatory photo of adult size child in costume. I haven't ordered my photos yet and this was taken quick while she was running backstage. This was her second weekend of performances. The week in between had some rough moments. One of these moments resulted in me making quiche for the first time, late at night after being gone all day and making two trips to the store... Oh, well it all worked out.
The recipe for one somehow made enough for two.

One evening last week the Lady came home to find that her quiche had been eaten while she was out. This was more than she could take at the time. I went to the grocery and purchased the ingredients to make a new quiche (after looking up a recipe). I think I follow directions, but I overflowed the first pie shell. I decided since there were two shells and excess whipped eggs, I should make a second one. What was I really going to do with a frozen pie crust anyway? I sauteed some chard and kale for the second quiche. Normally I wouldn't buy a pie crust, but it was 11pm and corners were cut. It seemed to turn out okay. The quiche smelled great, but I don't eat eggs so I'm not sure about the flavor. It looked right (if that helps at all) and my family ate it willingly.

Vegan Quiche
 Mr. Husband and Miss Lady eating quiche all week made me hungry, but I don't eat eggs. I decided to make a vegan version. It could definitely be prettier and I'm sure next time it will be, but it tastes okay. I think I could have added more water or something in order to get a smoother filling for the crust. I used a recipe from PBS.org. It was very simple and involved most of the same ingredients used in tofu scramble.
I was hungry. I didn't wait for it to cool and firm.

I just read through the quiche directions and I can tell you what I did wrong. Do you see how it looks layered in the photo above? That was a mistake not a preference. I forgot to stir the blended tofu with the cooked vegetables. Oops. I'm sure the flavor is still basically the same, but I would have preferred everything to have been blended together. Not skipping that step might have helped it to fill the pan better. This time I made my crust using the same recipe as before with the pot pies. It's a really great non-vegan recipe and I just sub out some of the ingredients.

Last thing, I follow a blog called Annie's Eats. I've been following awhile and sometimes I will veganize a recipe. I was at the farmer's market on Saturday and I saw a woman that I thought had to be Annie from Annie's Eats. It was her, but I did not speak to her or tell her that I follow her blog. It seemed too weird. Is it strange to be a blog groupie? I'm torn.

Easter!

This was the first time in 11 years that I didn't dye eggs and travel to my grandmother's for Easter.  The Lady Bean is in Disney World.  I got a text from her and she Instagrammed a picture from Epcot (not for me really, but for her 1500 followers).  So, Mr. Husband and I spent our first married Easter at home playing with our doggy house guest and working on projects.  He finished the garage organization, puppy chased a tennis ball, and I painted the kitchen cabinets... sort of a moment of spontaneous decorating (an outburst?).

I decided the white on the cabinets was dirty and then I discovered that it wasn't just dirty, it was stained.  I thought it was probably time to paint, but the kitchen has been white for 2 years and the decor has been the same since I moved in.  The knife block on the counter was my cabinet inspiration.  I painted the block (and the brooms) a few months ago.  This is almost done, but of course all this green means that other things in the room have to change (the curtains, the red tins, the picture frames,etc.).  I'll be sewing and painting for at least a couple more weekends, but it's really nice and bright now.

Once I got the cabinets going, I emptied the walls.  I had a red kitchen for a very long time.  Since moving into the house though, my kitchen has been transitioning and moving away from red.  Tonight I'm hoping to finish spraying the hardware and then I'll attack this pile to figure out what to do.  I hope to have the attention span to finish this before I start yet another thing.

One Small Victory

I'll take it!  Little bits of home makeover victory make me happy.  Today I thought I was going to tackle the dresser painting since I went out and got paint last night, but instead today turned out to be "organize the new dishes day".  It's pretty great.  I have one super fabulously organized kitchen cabinet.  I was going to say after this the kitchen is complete, but then I remembered that I need proper spice storage (so close!).
Cup hooks = Fancy.  I promise.
The card in my camera wasn't working with me so I Instagrammed a photo for now (Will the cup hook people some day use it to sell their wares?).  Once I resolve my card issue, I'll work on documenting the changes that have been made to the kitchen.  I guess tomorrow will be a better day to paint furniture.

Doughnut Muffins

A baking urge hit me this weekend.  On Friday night I baked these pockets.They're good, not fabulous, but still good.  I kept getting distracted while making them and my crust didn't stay together.  Maybe you'll have better luck.

Yesterday, the Lady Bean wanted to bake.  There's usually a point where she looses interest and this was no different, but she was happy.  This is what she made:

Doughnut Muffins
 They taste like a sugar and cinnamon cake doughnut.  The batch size is small and they're fairly simple to make.


I scanned my pin board for food items that I already had the ingredients to make.  This was the winner.  I substituted coconut milk for the dairy needed.  I had opened the can on Friday night to use it when I made the wheat dough.  I am now a super fan of the coconut milk possibilities.  It seems to work so well.  I can tell that these were good too because they were gone in 12 hours and I only got one.  Next time I'll make minis.
